If you are going to send the old couch to the "dump", I would suggest taking a big scrap of the old fabric and wrapping it around a scratching post. Their scent is already on it and they are used to the knap of the material. Another suggestion: choose a very tight woven fabric for your new couch. Microfiber suede is great. My cats have never touched it. The tape works, however, you really have to watch where your cat tends to scratch and they may become innovative and find new spots. The tape does show if there is a lot of light in the room.

Cats are very territorial. The new kitty was the invader, regardless that it wasn't aggressive. You're lucky your cat didn't act out by "re-establishing" his/her territory. Your dog may have simply been protective of your cat, especially if they are "buddies". The dog didn't sense any iminent danger, therefore did not become agressive. I wouldn't recommend it again.

Chances are the kittens were dead before she ate them or close to death. The mother cat can sense this. Mother cats will usually suffocate their young first if they are sick at birth. Sometimes the mother will pass on a toxic poisoning that she has developed proir to their birth. Have you tried reintegrating the kitten with the mother to see if she will let it nurse? Obviously complete supervision would be necessary. If she rejects the kitten then there could be a medical issue with her.
